Directions:
Prepare rice according to package directions. When rice is done, add remaining ingredients (except pastry shells). Mix well. Reheat 1 minute. Fill pastry shells with rice mixture. Serve with a mixed green salad and balsamic vinaigrette if desired. Refrigerate leftovers immediately.
