Speedy Chicken Salad

Yield: 2-3 servings

Ingredients

Add frozen, fully cooked, chicken breasts, diced to shopping list 9 oz. frozen, fully cooked, chicken breasts, diced

Add mayonnaise to shopping list 1/4 cup mayonnaise

Add celery, thinly sliced to shopping list 1/4 cup celery, thinly sliced

Add grapes, red or green seedless, halved to shopping list 1/4 cup grapes, red or green seedless, halved

Add pecan pieces to shopping list 2 tablespoons pecan pieces

Add salt, to taste to shopping list salt, to taste

Add pepper, to taste to shopping list pepper, to taste

Optional:

Add lettuce leaves to shopping list lettuce leaves

Add crackers to shopping list crackers

Directions:

In a large bowl, combine all ingredients except lettuce and crackers; mix well. Refrigerate until cold.

Place lettuce leaves on individual plates; scoop chicken mixture onto lettuce. Serve with assorted crackers if desired. Refrigerate leftovers immediately.
