MEMPHIS STYLE RIBS: Mix together, garlic powder, onion powder, white pepper, seasoned pepper, chili powder, cumin, brown sugar, paprika and cayenne pepper until well blended. Rub each slab of ribs with about 1/4 cup dry rub mixture. If desired, baste ribs 3 to 4 times during cooking time with apple cider to which you've added crushed red pepper.
SOUTHERN COMFORT RIBS: Mix together, paprika, garlic powder, seasoned salt, dry mustard, oregano and chili powder until well blended. Rub each slab of ribs well with about 1/4 cup dry rub mixture. If desired, baste ribs towards end of cooking time with barbecue sauce to which you have stirred in spicy brown mustard and a little molasses or bourbon.
PACIFIC RIM RIBS: Mix together, five-spice powder and ground black pepper until well blended. Rub each slab of ribs with 3 teaspoons dry rub mixture. Baste ribs towards end of cooking time with hoisin sauce mixed with honey, sherry, soy sauce, ginger root and garlic. ..................................................................................................................................
Grill over medium heat 15 - 20 minutes turning frequently for even cooking and basting as recipe directs.
